Abstract:
Roselle (Hibiscus sabdariffa) is mostly cultivated for its pleasant red color calyxes which are used as an ingredient in numerous food products like jam, jelly, ice-cream, beverages and bakery products. In addition to this, many therapeutic properties have been linked to roselle, owing to the presence of phenolic compounds. These include antioxidant, hypocholesterolemic, anti-obesity, insulin resistance reduction, antihypertensive, anti-carcinogenic, diuretic, antimicrobial and cytotoxic properties. Roselle seeds possess high fat and protein content which makes them suitable for oil and protein extraction.
