Anthocyanin rich ready-to-serve beverage co-pigmented with black soybean extract and its effect on antioxidant profile and color stability

Abstract:
Copigmentation is the formation of molecular connections or complexes by pigments and other non-colored organic substances in solution. It usually leads in an increase in absorbance and, in certain circumstances, an increase in the wavelength of the pigment's maximum absorption. The antioxidant content Total Phenolic Content, Total Flavanoid Content, Total Anthocyanin Content, Monomeric and Polymeric color were done by Aluminum Chloride assay, Folin-Ciocalteu assay, pH differential technique and Bisulfite bleaching assay correspondingly. Antioxidant activities DPPH IC50 and FRAP content was estimated. Browning index, hyper chromic and bathochromic shift was equated by equation The results revealed that among four Formulated Beverages, FB4 (40:42:12:4:2) exhibited significantly high total anthocyanin (9070.57 mg Cy-3-G/L), Cyanidin-3-Rutinoside (2458 mg/L), Pelargonidin-3-Glucoside (1080.6 mg/L), total flavonoids (10.6 mgQCE/ml) as compared to FB1 (40:54:0:4:2) of total anthocyanin (5143.52 mg Cy-3-G/L), Cyanidin-3-Rutinoside (2101 mg/L), Pelargonidin-3-Glucoside (728.4 mg/L), total flavonoids (7.9 mgQCE/ml) at p≤0.05 level. The antioxidant activities of FB 4 exhibited (22.1±0.16) IC50 value and (48.4 mgAscE/ml) FRAP content. Estimated values for PC (1.363±0.11), CD (11.9±0.02) % PC (11.4±0.01), BI (1.58), Hyper chromic (2.444 Abs) and Bathochromic shift (564 nm) were significantly higher than the estimated values of formulated beverage 1. Thus, these findings indicate that a beverage made from black soybeans, corn silk, and black mulberries is a valuable source of functional beverage with therapeutic potential that could be meant for a large number of customers affected by metabolic ailments. The study aimed to develop Ready-To-Serve (RTS) beverages to enhance anthocyanin-rich beverages and create new value-added products.
